Retsina has a long story, said it was used as a preservation agent and an effective antiseptic, protecting wine from spoilage. The amount of pine resin used for it was huge, taking over the entire aromas and flavours of the variety used. Back then, it was not good quality retsina. 
Since the 90s many producers started to make experiment with this kind of vinification to revive the wine and its tradition.

Retsina is not an appellation wine but a Traditional Designation Wine (TDW) of Greece. Nowadays, addition of pine tree resin is very small, (the ones I have tried ranged between 200-300grs per 1000L),you can taste it but also identify the characteristic of the grape variety used to make the retsina, resulting on a high-quality, fresh, full of aromas and enjoyable wine.

Varieties used for Retsina are Assyrtiko and Muscat but all those labelled as TDW Retsina must be produced only from Savatiano and Roditis varieties. Occasionally you can find some Rosé made in Retsina style. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
